Soybean Milk
Pick over the beans. Soak them in water over night (about a cup or two of soy beans in 3-5 cups of water). The next day rinse the beans and boil them in water for about 10 minutes. Drain again and put in a blender and blend with water, roughly equivalent amounts of beans to water. Strain the mush in a clean cheesecloth, towel or t-shirt. Simmer gently again for a few minutes more, being very careful.
Drink with salt or sugar or chill and drink later.
Variation: You can skip the straining bit making sure that you have ground the mush very fine with lots of water. You can eat this 'duyu' with freshly made noodles and shredded cucumbers.
(the noodle dish is called 'kong guksu' and the soy bean milk is usually cold)
