TVP Spaghetti Sauce

1 cup TVP
2 tbsp. olive oil
1 tsp. herbes de provence
1 1/2 tsp. oregano
1 tsp. rosemary
1 1/2 tsp. basil
black pepper

2 tsp. veggie bovril concentrate
boiling water
1/2 cup celery, chopped
2 large cloves garlic, minced
1 medium onion, chopped
1 large can tomatoes, drained
1/2 cup red wine

Combine TVP, oil, spices, and bovril. Cover with boiling water
and let stand 3 hours.

Fry the celery, onion, and garlic in some oil until tender. Add
the TVP and fry 10 minutes. Add the tomatoes and wine, and simmer,
covered, for 20-25 minutes. Serve over spaghetti.

Yield: 6 servings
