Vegetarian Spaghetti Sauce
Yield: 4 servings

2 tablespoons olive oil
1 large onion, chopped
1 stick celery, chopped
1-2 cloves garlic
200 g mushrooms, sliced
400 g can chopped tomatoes
1 tablespoon tomato puree
50 g bulghar wheat
2 tablespoons fresh oregano, chopped
2 tablespoons fresh basil, chopped
salt
fresh ground black pepper
Parmesan cheese

Heat the oil in a large saucepan. Fry the onion, celery and garlic
until softened. Add the mushrooms and fry for 2 minutes. Add the
tomatoes, tomato puree and bulghar wheat. Simmer for 10 minutes.
Add herbs and seasoning and simmer for 2 more minutes. Serve on
top of cooked spaghetti, accompanied with parmesan.
