Salad Vegetables Saute

1 Tbs oil
3 cups thinly sliced celery
2 cups cut green beans
4 cups coarsely chopped Chinese cabbage
2 cups coarsely chopped spinach leaves
salt and pepper to taste
1/4 cup water

Heat oil in a large skillet or wok. Stir in the celery and green
beans; saute, stirring constantly, 2 to 3 minutes, or just until
shiny-moist.

Add cabbage and spinach; toss lightly to mix well. Sprinkle on
salt and pepper; pour in water; cover.

Cook until vegetables are just crisp-tender.
