Strawberry Spinach Salad - from Cafe Pacifico
4 large strawberries
120ml vegetable oil
30ml white wine vinegar
1 tbsp each fresh chopped basil and chives
1 tsp rice syrup or honey substitute
1/4 tsp fresh mustard
add salt and pepper to taste
Blend together the above ingredients and drizzle over fresh spinach,
sliced strawberries and lettuce. Sprinkle with pine nuts.
