Stuffed Peppers 03

Lentil-Stuffed Peppers Yield: 4-5 servings
2/3 c red lentils 4 tbsp vegetable oil 4 med green bell peppers 1 tsp cumin seeds 2 onions, chopped 2 or more green chiles 1-inch piece ginger, grated 1 tbsp ground coriander 1 1/4 c water salt and pepper 2 tbsp chopped cilantro diced tomatoes, optional
Rinse lentils and soak for 30 minutes. Heat half oil in skillet. Add peppers and cook for 3 to 5 minutes till golden brown. Drain and cool. Add remaining oil to pan. Cook cumin till they begin to pop. Add onions and chiles and cook for 8 minutes. Stir in ginger and coriander. Drain lentils and add to the pan with water. Stir well and cover. Cook for 15 to 20 minutes til lthe liquid has evaporated.
Stir in salt and pepper. Add cilantro. Cut tops off peppers and remove seeds. Stuff with the lentils and replace the tops. Stand in a baking dish. Bake at 350F for 15 minutes.
Note: I like to use 5 peppers, not 4, and either mix some diced canned tomatoes into the filling or leave a bit of room in each and add a layer of tomatoes.
