SWEET AND SOUR RICE WITH ALMONDS
1/2 cup almonds
1/2 cup maple syrup
1/2 cup brown rice vinegar
1/2 cup ketchup
1/4 cup soy sauce or bragg amino
1 T cornstarch
1 onion, chopped
1 red pepper, chopped
1 tomato, chopped
1 cup pineapple, chopped (OPT)
4 cups of cooked rice
Bake almonds on foil for 20 minutes in a 300 degree oven. Combine
syrup, vinegar, ketchup, soy sauce in pot and boil for 2 minutes.
Dissolve starch in 1/4 cup of cold water and add it to the sauce.
Boil one more minute.
Simmer onion and pepper in 1/2 cup water for 8 minutes. Drain off
water and add tomato, pinapple, almonds and sauce. Cook for 5
minutes and serve over hot rice.
