Tamari Almonds

1 pound unblanched almonds (almonds with skins on)
2 tablespoons tamari

Spread almonds on a cookie sheet and bake in preheated 350 oven
for 18 to 20 minutes. Almonds should be toasty brown on the inside.

Empty hot almonds into large bowl and immediately pour tamari over
them. Toss almonds in the tamari until well coated. They will
hiss, but keep stirring.

Spread nuts on cookie sheet and let dry for about an hour. Can be
stored in a covered container for up to two months.

This recipe was quick and easy. I too, found the cooking time too long and reduced it to 12-15 minutes. Turn the pans 1/2 way thru and stir the nuts from outside to inside of pan. If I cooked them until the insides were brown they were burnt. OK to stop when they are still white. Also experimented with straight soy sauce which is less expensive than Tamari and they came our just fine. I recommend this recipe. A quick to prepare healthy snack food!
