Tofu Burgers

3 1/4 cups cooked bulgar wheat
1 lb tofu, mashed
2 eggs
1 medium onion, chopped
1 t dried basil
3/4 t oregano
2 T grated Romano cheese
2 1/2 cups whole wheat flour

2 T olive oil
1 onion chopped
1 lage clove garlic, pressed
6 oz can tomato paste
4 cups chopped, peeled tomatoes
1/4 to 1/2 cup water
6 slices (3 oz) mozzarella cheese

Combine the bulgar, tofu eggs, onion, basil, oregano, garlic, and
cheese. Mix thoroughly and then stir in flour. With slightly
dampened hands, form the mixture into patties and cook in a skillet
in a small amount of oil. You should have 14-16 patties. Cooked
burgers will keep several days in refrigerator or longer in freezer.

Heat olive oil and saute onion and garlic for a few minutes until
they are softened and fragrant. Stir in tomato paste and cook 1
min. then stir in the tomatoes, adding water if the sauce is too
thick(actually, red wine is nice here instead of water) and cook
30 min over low heat.

About 20 min before serving, heat burgers in the tomato sauce.
Transfer to a baking dish and top with the mozzarella cheese. Bake
at 350 F. for 15-20 min or until the cheese is melted and dish is
thoroughly heated. 4-6 servings
