Tofu Pepper Burgers
1 pound firm tofu, drained
1 cup finely chopped bell peppers
1/4 to 1/2 cup finely chopped scallions
1 T. tamari or Bragg's Liquid Amino Acids
1 clove minced garlic
1 T oil or more
1/2 t. ginger
1 t. lemon juice
Combine tofu with vegetables, tamari, and garlic. Form into 8
patties. (I sometimes add bread or cracker crumbs for thickening.
Depends on what is on hand). Fry the patties in oil until one side
is browned. Then gently flip, and brown other side. Sprinkle with
ginger and lemon juice towards end of cooking time.
I have never tried baking these, but I imagine they could be baked.
You could lightly brush with oil, perhaps, and broil them?
We serve on toasted buns, with some combo of lettuce, tomatoes,
mayo, onions, sprouts, etc.
