Tofu Cheesecake
Yield: 8 servings

2 c Grape Nuts cereal
1/4 ts cinnamon
1/4 c maple syrup
1/4 ts almond extract

4 1/2 pk Mori-Nu Lite firm tofu
1 c sugar
1 tb tahini
3 tb lemon juice
3 ts vanilla
1 1/2 ts almond extract
8 tb arrowroot dissolved in 6 tb rice or soy milk

Grind cereal and cinnamon in blender or food processor for at least
two minutes. Put in mixing bowl and stir in syrup and extract until
moistened.

Press mixture evenly into bottom of a 9" springform pan. Bake 5
minutes at 350 degrees. Cool.

Blend all filling ingredients in food processor until very smooth.
Spread evenly over crust in pan and bake in 350-degree oven until
lightly browned, about 30 minutes. Cool on rack. Refrigerate and
chill until firm. May be topped with any fruit, such as a can of
strawberry pie filling. Place on a large plate, run knife around
edge of pan, and then release sides of springform pan. Store in
refrigerator.
