TOFU CHEESECAKE

2 cups Grape-Nuts cereal
1/4 tsp cinnamon
1/4 cup maple syrup
1/4 tsp almond extract

Grind cereal and cinnamon in blender or processor for at least two
minutes. Put in mixing bwl and stir in syrup and extract until
moistened. Press mixture evenly into bottom of 9" springform pan.
Bake 5 min. at 350 degrees. Cool.

Filling

4 1/2 pkgs Mori-Nu Lite tofu (extra firm)
1 cup sugar
1 Tbs tahini
3 Tbs lemon juice
3 tsp vanilla
1 1/2 tsp almond extract
8 TBS arrowroot dissolved in 6 Tbs rice or soy milk

Blend all in food processor until very smooth. Spread evenly over
crust in pan and bake in 350 degree oven until lightly browned, about
30 minutes. Cool on rack. Refrigerate and chill until firm. May be
topped with any fruit. (I like a can of strawberry pie filling.)
Place on large plate, run knife around edge of pan, and then release
sides of springform pan. Store in refrigerator (duh! :) )
