TOFU CHEESE CAKE

1 c. graham cracker crumbs or 1 c. wheat germ
1/4 c. melted butter
1 tsp. honey or maple syrup

8 oz. tofu
3 eggs
1/4 c. maple syrup
2 Tbsp. lemon juice
1 tsp. vanilla
4 oz. cream cheese

2 to 3 c. strawberries, cherries or peaches
1 Tbsp. honey
3 Tbsp. orange juice
2 tsp. arrowroot or cornstarch

Mix crumbs with butter and press into 9-inch pan. Drain tofu. Beat
eggs, adding tofu a little at a time. Add rest of ingredients;
blend. Pour into prepared crust. Bake at 325 degrees for 40 or 45
minutes.

Topping: Cook fruit with honey and orange juice with arrowroot
until thickens; set aside until cake is baked and cooled. Cover
with topping. Chill at least an hour before serving.
