Tofu Cheesecake 15

Chocolate Tofu Cheesecake Yield: 8 servings
1 prebaked graham cracker crust 2 lb tofu 2 c sugar 6 1-ounce squares semi-sweet chocolate 2 ts vanilla 1 ts almond extract pinch of salt 1/2 c additional sugar
Have ready 1 prebaked graham cracker crust. Drain 2 pounds tofu between 12 towels with a breadboard weight on top for about 20 minutes. Blend the drained tofu, 1/2 pound at a time, until smooth and creamy. With each 1/2 pound in the blender add 1/2 cup sugar. Pour all the blended tofu and sugar into a bowl. Preheat oven to 350 degrees.
Melt in a double boiler six 1-ounce squares semi-sweet chocolate and add to the blended tofu mixture. Mix together well along with the vanilla, almond extract, salt and additional sugar.
Pour this mixture into the prebaked crust, then bake for about 40 minutes. When chilled, top with fresh fruit.
