Tofu Cheesecake 17

TOFU MAPLE CHEESECAKE
1 cup graham cracker crumbs 1/3 cup brown sugar 4 Tablespoons softened margarine
1/3 cup orange juice 1 Tablespoon plain gelatin powder 2 cups mashed tofu 1 large ripe banana 2/3 cup maple syrup 1/2teaspoon vanilla 2 to 3 Tablespoons of lemon or lime juice
Pour the orange juice into the top of a double boiler. Sprinkle the unflavored gelatin over the top, and stir until the water in the bottom half of the cooker comes to a boil, and the gelatin granules are all dissolved. Then, in the blender, mix the rest of the ingredients and the heated, dissolved gelatin. Blend the filling until it is smooth, then pour it into the cooled crust. Refrigerate the pie for about 3 hours or until it develops a nice firm consistency. Serve alone, or with fruit.
