TOFU CHEESECAKE

2 cups granola
1/3-1/2 cup vegetable margarine
3/4 soy milk
2-1/2 cups firm tofu
1/2 cup vegetable oil
1 tsp vanilla extract
1 tsp almond extract
2 tsp arrowroot
Fruit for topping

Grind the granola until very fine. Melt the margarine and mix in
the granola crumbs. Spread mixture in a greased flat tin and bake
it in a 350 degree oven for 5 minutes.

Put the milk, tofu, oil, vanilla and almond extracts and arrowroot
into a blender and blend thoroughly until smooth. You may have to
break this up into smaller batches and blend separately.

Remove piecrust from the oven and pour in the filling.

Bake in a 350 degree oven for 20 minutes. Remove and set aside to
cool thoroughly.

Top the cheesecake with fruit topping, and set in refrigerator to
chill to desired consistency before serving.
