TOFU ICE CREAM

1 10-oz container silken tofu
1 tsp almond extract
1 T sugar
3 oz bar Tropical Source (vegan) chocolate bar, broken into small pieces

Mix tofu, extract and sugar in blender until creamy. With blender
running on medium, drop chocolate chunks in and blend until finely
chopped and well incorporated. You may need to pulse the blender.

Pour into an ice cream maker and follow instructions. OR pour into
a container and place in freezer. Every half hour remove and stir
well. After 3 mixes, it should be the consistency of soft-serve
ice cream. Freeze hard without further mixing if desired.
