Sloppy Joes Too

1 yellow onion, chopped
1 green pepper or celery stalk, chopped
1 pound tofu, frozen and thawed
1/2 cup ketchup
1 tablespoon prepared mustard
2 tablespoons cider vinegar
2 tablespoons soy sauce
2 tablespoons honey or maple syrup
1 teaspoon chili powder
whole wheat buns

Squeeze the excess water from the thawed tofu and crumble. Saute
the onion and green pepper in a small amount of water until softened.
Add the tofu and the remaining ingredients and mix well. Cook about
10 to 15 minutes, stirring occasionally. Serve on whole wheat buns
with your choice of garnishes.
