Eggless Salad
1 pound firm light tofu, drained 6 tablespoons light or nonfat mayonnaise 1/4 cup finely chopped red pepper 1 large carrot, finely shredded 3 green onions, finely chopped 1/2 cup finely chopped celery, (optional) 2 tablespoons chopped fresh parsley 2 tablespoons relish 2 teaspoons yellow mustard 1 teaspoon Mrs. Dash Garlic & Herb Seasoning 1/2 teaspoon salt, (or to taste) 1/4 teaspoon freshly ground black pepper
In a medium bowl, mash tofu with a fork. Add remaining ingredients and mix well. Adjust seasonings to taste.
