Tofu Sandwiches

2 slices brown or whole wheat bread per sandwich (makes a BIG difference, don't use white bread) 1 bread-size slice firm tofu per sandwich--about 1/4 to 1/3 inch thick romaine or other green lettuce leaves (NOT iceberg), 1 or 2 per sandwich tomato slices to cover a slice of bread bean sprouts AND/OR cucumber slices AND/OR green bell pepper slices red onion slices (not optional, essential!) spicy mustard (Dijon, brown, whatever), as much as you can stand
Slap it all together with the mustard next to the tofu, squish down to the size of your mouth and chomp it down. It is anything but bland. If you're saying "but it's just a garden sandwich with tofu added" well sure it is, but look how much more filling and nutritionally complete that garden sandwich got with the addition of that little slice. Not to mention that it acts like a soft cheese, adding moisture and smoothness without the nasty ingredients of mayonnaise or butter.
