Vegetable Curry
6 servings

oil as needed
4 carrots, sliced
2 onions, sliced
1 T hot curry powder
1/4 c flour
1 c water
3/4 c raisins
3/4 c cashews (raw or roasted)
3 T mango chutney
1 T brown sugar

Saute carrots and onions in oil until golden. Add curry powder and
flour and saute a minute more. Add water and simmer until carrots
are tender. Add the rest of the ingredients. Adjust seasoning.
Simmer until raisins are soft and seasonings mingle. Serve over
soybeans, kidneys, limas, brown rice, or a mix the above. It can
easily be prepared well in advance.
