Low-Fat Vegetable Loaf

1 cup chopped tomatoes
1 cup baby peas
3 Tablespoons minced onion
1/2 cup lite evaporated milk
1/8 teaspoon minced garlic
1 cup cooked diced carrots
1/2 cup diced celery
1 cup soft bread crumbs
4 egg whites, beaten
1/8 teaspoon pepper

Preheat oven to 350: F. In large bowl, combine all ingredients,
mix well. Turn onto work station and form into loaf. Place loaf in
nonstick loaf pan. Bake for 1 hour. Serve hot. Makes 8 servings.
