Veg Nog

3 cups firm silken tofu
2 1/3 cups soymilk
3/4 cup granulated sweetener or 1 cup liquid sweetener
1/4 tsp. salt
1 1/4 cups cold water
1 1/4 cups rum, brandy or apple juice with rum or brandy flavoring
1 1/2 to 2 tablespoons pure vanilla extract
24 ice cubes
Freshly grated nutmeg

Crumble the tofu and place it in a blender with the soymilk,
sweetener, and salt. Blend until very smooth. Scrape this into a
large bowl or pitcher and whisk in the water, rum or brandy, and
vanilla. Mix well, cover, and refrigerate until serving time. To
serve, blend half of the "eggnog" mixture in the blender with 12
of the ice cubes until frothy. Repeat with the remaining mixture
and ice cubes.

Serve in glasses with nutmeg sprinkled on top. Makes 12 servings.
