Tofu Whipped Cream

1 cup tofu
4 T. oil
1/4 cup sugar
1 t. vanilla
1/8 t. salt
1/2 t. lemon juice (optional)
2 T. soymilk, as needed

Blend the ingredients in the order given, adding the soymilk last
only as needed to blend the tofu into a thick cream. Scrape the
sides of the blender inward to help blend. The mixture should be
thick, but thin enough that it turns by itself in the blender.
Chill. Whip the cream with a spoon before serving.
