Whipped Tofu 03

Whipped Soy Cream
1 pound silken tofu 1/2 cup rice syrup 1/4 cup real maple syrup 1/4 teaspoon sea salt 1 tablespoon vanilla 1/2 teaspoon almond extract (optional)
Drain tofu in colander. Whip all ingredients together in blender or food processor.
Tips: Add grated lemon rind for a zesty taste. Add several tablespoons of almond butter for a richer flavor. Reduce the amount of sweetener for a mellower cream.
