1 cup rice
1/2 tsp salt
2 Tbsp butter
1 qt milk
2 eggs, separated
1/2 cup sugar
2 tsp vanilla
Cook rice till almost done, 15 min. Strain rice and return to pot.
Add milk, sugar, vanilla and 2 egg yolks. Cook until a little thick,
when almost done beat the 2 egg whites until peaks form, fold into
rice mixture. Cook slow, until thick. Pour into dish and add 1/4
to 1/2 cup more milk, stir and chill.
