Pie Crust

3 cups flour
3 tablespoons oil
butter
cold water
1 teaspoon salt
2 tablespoons sugar, optional

Mix flour and salt (and sugar) together until well sifted together.
Add oil and stir well.

Add the butter in small increments, mixing with your fingers until
the flour forms little balls resembling small peas. Then add in
two tablespoons water and stir well. Keep adding cold water by
tablespoons, stirring well between each addition until the dough
is soft and pliable and a bit flaky still. Form into a ball with
your hands.

Roll out dough on a piece of floured wax paper to the appropriate
size for your baking dish.

Fill with your favourite pie filling or with casserole ingredients
and bake.
