Basic Pie or Quiche Pastry (Vegetable oil pastry)

2 cups all purpose flour
1/2 tsp salt
1/2 tsp sugar
1 egg white
1/2 cup oil
1 to 5 tablespoons cold water

Combine flour and salt. Add the egg white, oil, and water. Stir
with a fork until just moistened. Slightly more water may be
needed. Shape into a ball, and place between two sheets of wax
paper. Roll to a 12 circle. Place in a 9 pie pan or a quiche
dish. Flute edges. Prick bottom and sides with a fork. Bake at
450 degrees for 12 minutes until brown.

Tried this pastry for something a little different from what I normally make, was really easy to prepare and baked really well. It is great because there is no need to chill the pastry before using. Once cooked was nice and light but was not crumbly. was great
